  • 1 (10.75 oz) can red enchilada sauce
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 cup cooked rice
  • 1 tsp Slap Ya Mama seasoning
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • ½ tsp red pepper flakes
  • 1 ½ cups sharp cheddar cheese, shredded
  • ⅓ cup chopped cilantro
  • ¼ cup sliced green onions

Step-by-Step Instructions

  1. Prep the Oven & Dish:
Preheat oven to 350°F. Spray a 3-quart casserole dish with non-stick cooking spray and set aside.
  2. Cook Beef & Veggies:
In a large skillet or Dutch oven over medium heat, cook ground beef and diced onion until beef is browned and onions are soft. Add minced garlic and cook for 2 more minutes. Drain off excess fat.
  3. Mix Everything In:
Stir in diced tomatoes, enchilada sauce, black beans, corn, cooked rice, and all seasonings (🌶️ Slap Ya Mama, cumin, chili powder, etc.). Mix well.
  4. Simmer for Flavor:
Cover and simmer the mixture for 10 minutes to allow the flavors to blend. Stir again before transferring.
  5. Assemble & Bake:
Spoon the beef and rice mixture into your prepared casserole dish. Top with shredded cheddar cheese 🧀
  6. Finish in the Oven:
Bake uncovered at 350°F for about 20 minutes or until the cheese is melted and bubbly.
  7. Garnish & Serve:
Sprinkle with fresh chopped cilantro and sliced green onions right before serving for a fresh pop of flavor 🌿
