These garlic cabbage steaks are crispy on the edges, tender in the middle, and packed with flavor. Whether you’re roasting them in the oven or crisping them up in the air fryer, this recipe is as easy as it is satisfying!


Ingredients

  • 1 large green or red cabbage
  • 3 tbsp olive oil (or melted butter for richer flavor)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp onion powder
  • ½ tsp dried thyme
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • Optional toppings: grated Parmesan, red pepper flakes, fresh parsley

1. Preheat oven to 400°F (200°C)
Line a baking sheet with parchment paper or grease lightly.

2. Slice the cabbage
Remove outer leaves and slice into ¾-inch thick “steaks” — keep the core intact to hold them together.

3. Mix and brush seasoning
Whisk olive oil, garlic powder, smoked paprika, onion powder, thyme, salt, and pepper. Brush generously on both sides of each cabbage steak.

4. Roast ‘til golden
Place on the baking sheet in a single layer. Roast for 25–30 minutes, flipping halfway through. Look for crispy, caramelized edges.

Preheat air fryer to 375°F. Cook seasoned cabbage steaks in a single layer for 10–15 minutes, flipping halfway. Perfectly crisp, even faster!
