A busy weeknight’s best friend, this One Pot Veggie Pasta is packed with colorful vegetables and cooks up fast with just one dish to clean. Zero stress, all flavor!


Ingredients:

  • 12 oz penne pasta
  • 4 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • ½ cup grated Parmesan (optional – use a veggie-friendly version!)
  • 1 tsp Italian seasoning

Instructions:

  1. 🥘 In a large pot, combine pasta, vegetable broth, cherry tomatoes, zucchini, and bell pepper.
