Easy Honey Roasted Carrots with Thyme

Looking for an easy side dish that feels fancy but takes almost no effort? These honey roasted carrots with thyme are your answer. Roasting brings out the natural sweetness, while honey and fresh thyme add a cozy, herby finish. Perfect for holidays or weeknights!
š Ingredients
- 1 lb carrots, peeled and cut into 1ā2 inch pieces (or use baby carrots)
- 2 tbsp olive oil
- 1 ½ tbsp honey
- 1 tbsp fresh thyme, chopped (or ½ tsp dried thyme)
- ½ tsp salt
- ¼ tsp black pepper

1. Prep the oven & carrots
Preheat oven to 400°F. Line a baking sheet with parchment paper. Cut carrots into even chunks (or leave baby carrots whole).
2. Toss it all together
In a bowl, mix carrots with olive oil, honey, thyme, salt & pepper. Coat well. Spread evenly on your baking sheet.
3. Roast ’til golden
Roast for 20ā25 minutes, stirring once halfway. For extra caramelized edges, roast 5ā10 mins more.
4. Serve & savor
Transfer to a dish, sprinkle with extra thyme, and enjoy warm! š«
