Creamy Marry Me Chicken Pasta Recipe

Ingredients

  • 4 boneless skinless chicken breasts, diced
  • 10 oz pasta (penne, rigatoni, or fettuccine)
  • 2 tbsp seasoned oil (from sun-dried tomatoes)
  • 2 tbsp cornstarch (to coat chicken)
  • 1 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup sun-dried tomatoes, thinly diced
  • 1¼ cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 cup chicken broth
  • 1 tsp red pepper flakes (optional)
  • 2 tsp dried oregano
  • Salt & pepper to taste
  • ½ oz torn fresh basil (for garnish)

Instructions

  1. Cook the Pasta 🍝
    Boil pasta in salted water until al dente. Reserve ½ cup pasta water, then drain and set aside.
  2. Season & Coat Chicken 🐔
    Toss diced chicken with cornstarch, oregano, salt, pepper, and red pepper flakes.
  3. Sear the Chicken 🔥
    In a large skillet, heat the seasoned oil. Cook chicken until golden and crispy (about 5–6 minutes). Remove and set aside.
  4. Sauté the Flavor 🍅🧄
    In the same skillet, melt butter. Add garlic and sun-dried tomatoes. Sauté 2–3 minutes until fragrant.
  5. Make the Sauce 🧀
    Pour in chicken broth and heavy cream. Simmer for 3–5 minutes. Add Parmesan and stir until smooth and thick.
  6. Finish It Off 💫
    Return chicken to the skillet, toss in cooked pasta. Stir until everything is coated and creamy. Add a splash of reserved pasta water if needed.
  7. Garnish & Serve 🌿
