- 1 lb carrots, peeled and cut into 1–2 inch pieces (or use baby carrots)
- 2 tbsp olive oil
- 1 ½ tbsp honey
- 1 tbsp fresh thyme, chopped (or ½ tsp dried thyme)
- ½ tsp salt
- ¼ tsp black pepper

1. Prep the oven & carrots
Preheat oven to 400°F. Line a baking sheet with parchment paper. Cut carrots into even chunks (or leave baby carrots whole).
2. Toss it all together

3. Roast ’til golden
