Tropical Coconut Bliss
This cake tastes like a sweet island escape 🏝️! Moist vanilla-coconut layers, creamy whipped frosting, and plenty of coconut flakes make this a dreamy dessert for birthdays, summer BBQs, or just because.
Ingredients
For the cake:
- 2 ½ cups all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp salt
- Âľ cup unsalted butter, softened
- 1 Âľ cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 tsp coconut extract (optional)
- 1 cup canned coconut milk
- 1 cup sweetened shredded coconut
For the frosting:
- 1 ½ cups heavy whipping cream, chilled
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp coconut extract (optional)
- 1 cup sweetened shredded coconut (for topping)
Step-by-Step Instructions 🍰🌴
- Prep Your Pans
Preheat oven to 350°F. Grease and flour two 9-inch cake pans (or line with parchment). - Mix Dry Ingredients
In a bowl, whisk flour, baking powder, and salt. - Cream Butter & Sugar
Beat butter and sugar until light and fluffy (2–3 minutes). - Add Eggs & Flavor
Mix in eggs one at a time. Stir in vanilla and optional coconut extract. - Combine & Fold
Alternately add dry mix and coconut milk, starting/ending with dry. Fold in shredded coconut. - Bake
Divide into pans. Bake 25–30 mins or until a toothpick comes out clean. Cool completely. - Make the Frosting
Beat cream cheese until smooth. Add powdered sugar and coconut extract. Separately, whip cream to stiff peaks and fold into cream cheese mix. - Assemble
