📝 Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil

For the Potatoes:

  • 1.5 lbs baby Yukon Gold or red potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • ⅓ cup grated Parmesan cheese
  • ½ tsp salt
  • ¼ tsp black pepper

Garnish:

  • 1 tbsp chopped fresh parsley 🌿

👩‍🍳 Instructions

Step 1: Preheat
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2: Season the Chicken
Pat chicken dry. Mix Italian seasoning, paprika, salt, and pepper in a bowl. Rub chicken with olive oil and coat with spice mix.

Step 3: Toss the Potatoes
In a large bowl, mix potatoes with olive oil, garlic, Parmesan, salt, and pepper.

Step 4: Assemble the Pan
Place chicken on one side of the sheet pan. Spread potatoes on the other side in a single layer.

Step 5: Bake It
Roast for 25–30 minutes, flipping potatoes halfway. Chicken should reach 165°F internally.

Step 6: Optional Broil
Sprinkle extra Parmesan on top and broil for 2–3 mins for a golden crust 🔥
