Ingredients

For the cake:

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • Âľ cup unsalted butter, softened
  • 1 Âľ cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 tsp coconut extract (optional)
  • 1 cup canned coconut milk
  • 1 cup sweetened shredded coconut

For the frosting:

  • 1 ½ cups heavy whipping cream, chilled
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract (optional)
  • 1 cup sweetened shredded coconut (for topping)

Step-by-Step Instructions 🍰🌴

  1. Prep Your Pans
    Preheat oven to 350°F. Grease and flour two 9-inch cake pans (or line with parchment).
  2. Mix Dry Ingredients
    In a bowl, whisk flour, baking powder, and salt.
  3. Cream Butter & Sugar
    Beat butter and sugar until light and fluffy (2–3 minutes).
  4. Add Eggs & Flavor
    Mix in eggs one at a time. Stir in vanilla and optional coconut extract.
  5. Combine & Fold
    Alternately add dry mix and coconut milk, starting/ending with dry. Fold in shredded coconut.
  6. Bake
    Divide into pans. Bake 25–30 mins or until a toothpick comes out clean. Cool completely.
  7. Make the Frosting
    Beat cream cheese until smooth. Add powdered sugar and coconut extract. Separately, whip cream to stiff peaks and fold into cream cheese mix.
