  • 1 lb breakfast sausage (mild or spicy, based on preference)
  • 1 28 oz package frozen tater tots
  • 8 large eggs
  • 1 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & pepper, to taste
  • 2 cups shredded cheddar cheese
  • Optional: diced green onions or parsley for garnish

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large skillet over medium heat, cook the breakfast sausage until browned, breaking it apart as it cooks. This should take about 6–8 minutes. Once cooked, drain any excess grease and set aside.
  • In a mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until fully combined.
  • Spread the tater tots evenly in the bottom of the prepared baking dish. Layer the browned sausage over the tater tots.
  • Pour the egg mixture over the sausage and tater tots, allowing it to seep between the tots. Sprinkle the shredded cheddar cheese evenly on top.

Baking

  • Bake in the preheated oven for 30–35 minutes, or until the casserole is set in the center and the cheese is golden and bubbling.
  • Let the casserole cool for a few minutes before slicing. Garnish with optional diced green onions or parsley.

Notes

For a spicier kick, consider using hot breakfast sausage or mixing in some diced jalapeños. This casserole can be assembled the night before and stored in the refrigerator. Experiment with different cheeses for varied flavors.
