Beef Mixture

  • 1 lb ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Rice

  • 2 cups white rice cooked

Green Poblano Cream

  • 2 poblano peppers roasted and peeled
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1 tbsp lime juice
  • Salt to taste

  • Diced avocado
  • Chopped cilantro

Preparation

  • In a large skillet over medium heat, cook the ground beef until browned. Add the diced onion and minced garlic, cooking until the onion is translucent. Stir in cumin, chili powder, salt, and pepper. Set aside.
  • Cook the rice according to package instructions. Once cooked, fluff with a fork and keep warm until ready to serve.
  • Roast poblano peppers until skins are charred. Peel skins, then blend with sour cream, heavy cream, lime juice, and salt until smooth.
  • Divide rice among bowls. Top with beef mixture, then drizzle with green poblano cream. Add any optional toppings.
