Energy Bites
- 1 1/4 cups rolled oats (start with 1 cup, add more if needed)
- 1/2 cup peanut butter
- 1/3 cup honey
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1/3 cup mini chocolate chips
Add rolled oats to a mixing bowl.
Add peanut butter to the oats.
Add honey and vanilla extract.
Add salt.
Stir until the mixture is fully combined.
Add mini chocolate chips.
Fold gently to distribute chocolate chips.
Line a plate or baking sheet with parchment paper.
Scoop the mixture into tablespoon-sized portions.
Roll each portion into a smooth ball.
Place energy bites on the prepared surface.
