Ingredients
  

Chicken

  • 4 boneless, skinless chicken breasts
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Sauce

  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 garlic cloves minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes sliced
  • 1/2 tsp Italian seasoning
  • 4 cups fresh spinach
  • 1/3 cup parmesan cheese grated

Instructions
 

  • Season chicken breasts with salt and black pepper.
  • Sear chicken in olive oil until golden and cooked through. Remove and set aside.
  • Melt butter and cook garlic until fragrant.
  • Add broth and cream, simmer until slightly thickened.
  • Stir in sun-dried tomatoes and parmesan.
  • Add spinach and cook until wilted.
  • Return chicken to skillet and simmer briefly before serving.

Notes

Use oil-packed sun-dried tomatoes for best flavor. Reheat gently to maintain sauce texture.
