Ingredients
  

Salmon Tacos

  • 2 lbs fresh salmon fillets
  • 8 corn or flour tortillas
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika

Charred Mango Salsa

  • 2 ripe mangoes peeled and diced
  • 1/4 cup red onion finely chopped
  • 1 jalapeño seeded and minced
  • 2 tbsp lime juice
  • 1/4 cup cilantro chopped
  • Salt to taste

Toppings

  • 1/2 cup shredded cabbage
  • 1 avocado sliced
  • 1/4 cup fresh cilantro leaves

Instructions
 

Preparation

  • Pat the salmon fillets dry with paper towels. Season them with salt, pepper, and paprika. Let them sit at room temperature for 15 minutes.
  • Grill the mango slices on a preheated grill until slightly charred. Dice the mango and combine with red onion, jalapeño, lime juice, and cilantro in a bowl. Season with salt to taste.

Cooking

  • Preheat the grill to medium-high heat. Grill the salmon skin-side down for 4-5 minutes per side, until cooked through. Remove from the grill and let rest.
  • Briefly grill the tortillas for a few seconds on each side until warm and slightly charred.

Assembly

  • Flake the grilled salmon into bite-sized pieces. Place salmon in each tortilla, top with charred mango salsa, shredded cabbage, avocado slices, and fresh cilantro.
