  • 1 1/2 lbs golden potatoes cut into cubes
  • 2 tbsp olive oil
  • 1 lemon juiced
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Fresh dill and parsley for garnish

Preparation

  • Preheat your oven to 425°F (220°C). Line a sheet pan with parchment paper. Pat the salmon fillets dry with paper towels and season with salt, pepper, and lemon juice.
  • In a mixing bowl, toss the cubed potatoes with olive oil, minced garlic, salt, and pepper. Spread evenly on the prepared sheet pan.
  • Roast in the oven for 15 minutes, or until they begin to crisp and turn golden.
  • Remove the sheet pan from the oven and arrange the salmon fillets among the potatoes. Return to the oven.
  • Bake for an additional 15-20 minutes, until the salmon is cooked through and flakes easily with a fork.

Serving

  • Remove from the oven and garnish with fresh dill and parsley. Serve hot with your choice of side dishes.

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven or microwave before serving.
