Ingredients
  

Base Ingredients

  • 1 can chickpeas drained and rinsed
  • 4 whole wheat wraps
  • 1 cup lettuce shredded
  • 1/2 cup bell peppers sliced

Creamy Dressing

  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions
 

Roasting the Chickpeas

  • Preheat your oven to 400°F. Line a baking sheet with parchment paper and set aside.
  • In a mixing bowl, toss the drained chickpeas with olive oil, salt, and your choice of spices. Spread them evenly on the prepared baking sheet.
  • Place the baking sheet in the oven and roast for 20 minutes, shaking the pan halfway through, until the chickpeas are golden and crispy.

Assembling the Wraps

  • In a small bowl, mix the Greek yogurt, lemon juice, garlic powder, salt, and pepper to make the dressing.
  • Lay a wrap on a flat surface. Spread a generous amount of the creamy dressing over it. Layer with roasted chickpeas, lettuce, and bell peppers.
  • Fold in the sides of the wrap and roll tightly to enclose the filling.

Toasting the Wraps

  • Heat a non-stick skillet over medium heat. Place the wraps seam side down and toast each side for 2-3 minutes until golden brown and crispy.
  • Cut the wraps in half and serve immediately with your favorite dipping sauce.
