  • 2 cups cooked shredded chicken
  • 8 oz rotini pasta
  • 1 packet taco seasoning
  • 1 cup cherry tomatoes halved
  • 1 cup bell peppers diced
  • 1 cup shredded lettuce
  • 1/2 cup black beans
  • 1/2 cup corn kernels

Dressing

  • 1 cup creamy dressing such as ranch or homemade

Optional Add-ins

  • 1 avocado diced
  • 1/4 cup sliced jalapeños
  • 1/2 cup shredded cheese

Instructions
 

Preparation

  • Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and rinse under cold water. Set aside.
  • Season chicken with salt, pepper, and half of the taco seasoning. Cook until done and shred. Alternatively, use leftover or rotisserie chicken.
  • In a large mixing bowl, combine cooked pasta, shredded chicken, tomatoes, bell peppers, lettuce, black beans, and corn. Mix well.
  • Pour the creamy dressing over the salad. Add the remaining taco seasoning and toss until everything is well coated.
  • Taste the salad and adjust seasoning if necessary. Add more dressing or taco seasoning to taste.
  • Serve immediately, garnished with optional add-ins like avocado, jalapeños, or cheese.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep dressing separate and add just before serving to maintain freshness.
