  • 1 lb ground beef
  • 2 cups ditalini pasta
  • 1 cup corn kernels
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup shredded cheese cheddar or mozzarella

  • 1 tsp paprika
  • Salt and pepper to taste

Preparation

  • Dice the onion and mince the garlic. Measure out the pasta, cream, and cheese. If using fresh corn, cut the kernels off the cob.

Cooking

  • In a large skillet, brown the ground beef over medium heat, breaking it into crumbles. Once cooked through, remove it from the skillet and set aside.
  • In the same skillet, add diced onions and minced garlic. Sauté until the onions are translucent and fragrant.
  • Add the corn kernels to the skillet, cooking until slightly charred for enhanced flavor.
  • Return the beef to the skillet, mixing it with the onions, garlic, and corn.
  • Add ditalini pasta and enough water or broth to cover. Simmer until the pasta is almost cooked.
  • Stir in heavy cream and cheese. Continue to cook until the pasta is fully cooked and the sauce has thickened. Season with paprika, salt, and pepper.

Serving

  • Garnish with fresh herbs and additional cheese if desired. Serve hot.

Storage

  • Allow leftovers to cool, then store in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of cream or broth.
