Classic Meatloaf with Creamy Mac

Ingredients
  

Classic Meatloaf

  • 1 1/2 lb ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried parsley
  • 1/3 cup ketchup

Creamy Macaroni

  • 2 cups elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup milk or light cream
  • 2 tbsp butter
  • 2 tbsp flour
  • cooking spray or oil for baking dish

Instructions
 

  • Preheat oven to 375°F and lightly grease a loaf pan or baking dish.
  • Combine breadcrumbs and milk in a small bowl and let soften.
  • Mix ground beef, soaked breadcrumbs, egg, onion, garlic, salt, black pepper, paprika, parsley, and ketchup until just combined.
  • Shape the mixture into a loaf and place in the prepared pan.
  • Bake uncovered for 55 to 60 minutes until fully cooked.
  • While the meatloaf bakes, cook macaroni in salted water until tender and drain.
  • Melt butter in a saucepan, whisk in flour, then slowly whisk in milk until slightly thickened.
  • Reduce heat and stir in cheddar until melted and smooth, then add macaroni and stir to coat.
  • Let meatloaf rest 10 minutes before slicing and serving with creamy macaroni.

Notes

Keep the cheese sauce slightly loose so the macaroni stays creamy when served.
