Ingredients
  

Apple Fritter Bites

  • Nonstick cooking spray for greasing
  • 1 1/2 cups all-purpose flour or gluten-free 1:1 blend
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 2 tsp ground cinnamon
  • 1/4 cup unsalted butter melted
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups Honeycrisp apples, peeled and finely diced about 2 medium

Glaze

  • 2 cups powdered sugar
  • 1/3 + 2 tbsp apple cider or apple juice

Instructions
 

  • Preheat oven to 400°F (200°C). Lightly grease a baking sheet with nonstick spray and line with parchment.
  • In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  • In another bowl, combine melted butter and sugar. Whisk in the egg, then add vanilla and applesauce.
  • Gradually fold dry ingredients into wet just until combined. Do not overmix.
  • Gently stir in the diced apples.
  • Drop 1-tablespoon portions of batter onto the prepared sheet, spacing about 1 inch (2.5 cm) apart.
  • Bake for 10 minutes, until set and lightly golden.
  • While baking, whisk powdered sugar with apple cider until smooth and pourable.
  • Switch oven to broil. Brush each fritter with glaze; broil 2–4 minutes until the glaze bubbles and lightly caramelizes. Watch closely.
  • Brush with a second coat of glaze and let sit 15 minutes to set. Serve warm.

Notes

Make it gluten-free: Use a 1:1 gluten-free flour blend. Storage: Airtight up to 3 days at room temp. Make ahead: Bake and glaze, then re-warm 5 minutes at 325°F (160°C).
