Wash and dry the fruit. Core and dice the apples into bite-sized pieces, then add to a large bowl.
Halve the grapes and add them to the bowl with the apples.
In a small bowl, whisk together lemon juice, maple syrup, vanilla, cinnamon, and a pinch of salt (if using).
Pour the dressing over the fruit and toss gently until evenly coated.
Cover and chill for 15 minutes, then serve cold as a breakfast side.
