Ingredients

  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 2 cups diced tomatoes
  • 1 cup diced bell peppers
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro

Optional Ingredients

  • 1 avocado diced
  • 1 jalapeño seeded and diced
  • 2 tbsp lime juice
  • 1 tsp cumin

Preparation

  • Wash and dice the tomatoes, bell peppers, and red onion. Chop the cilantro finely. Set aside.
  • In a large mixing bowl, combine the black beans, corn, diced tomatoes, bell peppers, red onion, and cilantro. Mix gently to avoid mashing the beans.
  • If desired, add diced avocado, jalapeño, lime juice, and cumin to the mixture. Stir to combine.
  • Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
  • Serve the cowboy caviar chilled with tortilla chips or as a side dish. It pairs well with grilled meats.
