  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 avocado sliced
  • 1/4 cup red onion thinly sliced

Preparation

  • In a large mixing bowl, combine lime juice, olive oil, garlic, cilantro, cumin, salt, and pepper. Add the chicken breasts and coat them well. Let marinate for at least 30 minutes, or up to 2 hours for best results.
  • Preheat a grill pan over medium-high heat. Grill the marinated chicken breasts for 6-7 minutes on each side, or until fully cooked through. Let the chicken rest for 5 minutes before slicing.

Cooking the Rice

  • Rinse the jasmine rice under cold water to remove excess starch. In a medium saucepan, combine the rice with 4 cups of water and a pinch of salt. Bring to a boil, then reduce heat to a simmer, cover, and cook for 15-18 minutes until tender.
