Equipment

  • 1 Large pot
  • 1 Mixing Bowl medium
  • 1 Baking Sheet

Ingredients

Gnocchi

  • 1 cup pumpkin puree
  • 2 cups all-purpose flour plus more for dusting
  • 1 tsp salt

Sage Butter Sauce

  • 1/4 cup vegan butter
  • 10 fresh sage leaves
  • 1/4 tsp black pepper

Instructions

Preparation

  • If using fresh pumpkin, roast it at 400°F until tender. Blend until smooth. Use immediately or store in the refrigerator.
  • In a medium mixing bowl, combine pumpkin puree, flour, and salt to form a soft dough. Knead gently on a floured surface.
  • Divide dough into four portions. Roll each portion into a long rope and cut into 1-inch pieces. Gently press each piece with a fork to create ridges.
  • Let the gnocchi pieces rest on a floured baking sheet for 15 minutes before cooking.
  • Bring a large pot of salted water to a boil. Add gnocchi in batches, cooking until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.
  • In a saucepan, melt vegan butter over medium heat. Add sage leaves and cook until the butter is infused and the sage is crispy. Season with black pepper.

Serving

  • Toss cooked gnocchi with the sage butter sauce. Serve warm, garnished with additional sage leaves if desired.

Storage

  • Store leftover gnocchi in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
