  • 1 Whisk
  • 1 salad spinner optional

Ingredients

Salad Ingredients

  • 2 cups cherry tomatoes halved
  • 1 large cucumber sliced
  • 1/2 cup fresh basil leaves torn

Basil Dressing

  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

Preparation

  • Wash and dry the cherry tomatoes, cucumber, and basil leaves thoroughly. Slice the tomatoes in half and cut the cucumber into thin rounds or half-moons. Tear the basil leaves into small pieces.
  • In a small bowl, whisk together the olive oil and balsamic vinegar. Add salt and pepper to taste, and whisk until well combined. Let the dressing sit for a few minutes to allow the flavors to meld.
  • In a large mixing bowl, combine the halved tomatoes, sliced cucumber, and torn basil leaves. Drizzle the dressing over the salad.
  • Gently toss the salad to ensure all ingredients are evenly coated with the dressing. Adjust seasonings if necessary.
  • Transfer the salad to a serving platter or individual bowls, garnish with additional basil leaves if desired, and serve immediately.
  • Place any leftover salad in an airtight container and store in the refrigerator for up to two days. Refresh with a squeeze of lemon juice before serving again.
