Ingredients
  

Sausage and Vegetables

  • 1 lb 1 lb (≈450 g) breakfast sausage, crumbled
  • 1 medium 1 medium yellow onion, diced
  • 1 piece 1 red bell pepper, diced

Egg Mixture

  • 8 large 8 large eggs
  • 1 cup 1 cup milk
  • ½ tsp ½ tsp salt
  • ¼ tsp ¼ tsp black pepper
  • 1 tsp 1 tsp garlic powder
  • 1 tsp 1 tsp onion powder

Casserole Base

  • 1 bag 1 bag (32 oz) frozen tater tots
  • 2 cups 2 cups shredded cheddar cheese Optional for garnish: fresh chives or parsley

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, crumble the breakfast sausage and cook until browned and no longer pink, about 5-7 minutes.
  • Add the diced onion and red bell pepper to the skillet and cook for an additional 3-4 minutes, stirring occasionally.
  • In a mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until well combined.
  • Grease the baking dish lightly with cooking spray or olive oil. Spread the cooked sausage and vegetable mixture evenly across the bottom.
  • Pour the egg mixture over the top, allowing it to seep through.
  • Arrange the tater tots in a single layer atop the egg mixture, pressing them down slightly.
  • Sprinkle shredded cheddar cheese evenly over the tater tots.

Baking

  • Bake for about 45-50 minutes, or until the egg is set and the tater tots are golden brown.
  • Once done, remove from the oven and let it sit for about 10 minutes before serving.
  • Garnish with fresh chives or parsley if desired.

Notes

For added flavor, try using spicy sausage or adding diced jalapeños. Make it vegetarian by substituting the sausage with sautéed mushrooms or spinach. Leftovers can be reheated in the microwave or oven.
