  • 1 cup long-grain white rice
  • 1 lb ground beef (or ground turkey)
  • 1 cup diced tomatoes (canned or fresh)
  • 1 packet taco seasoning
  • 1 cup diced bell peppers (red or green)
  • 1 cup corn (canned or frozen)

Toppings

  • 1 cup shredded lettuce
  • 1 whole avocado, sliced
  • 1/2 cup shredded cheese (cheddar or a blend)
  • 1/4 cup sour cream
  • optional Fresh cilantro, chopped optional garnish

Instructions
 

Preparation

  • In a medium saucepan, combine 1 cup of rice with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes until water is absorbed and the rice is tender.
  • While the rice cooks, heat a skillet over medium heat. Add the ground beef, mixing it as it browns.
  • Once the meat is fully browned, drain any excess fat.
  • Stir in the taco seasoning and diced tomatoes, letting it simmer for a few minutes.
  • Add the diced bell peppers and corn to the beef mixture and cook for an additional 5 minutes.
  • Prepare the toppings: slice the avocado and chop the cilantro.

Assembly and Serving

  • Spoon a generous amount of rice into bowls.
  • Top with the beef mixture, layers of lettuce, avocado, cheese, and a dollop of sour cream.
  • Garnish with fresh cilantro and serve immediately while warm.

Notes

For a vegetarian option, substitute the ground beef with black beans or lentils. Prepare the rice and toppings in advance for quick assembly on busy nights.
