  • 12 oz rotini pasta
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper diced
  • 1/2 red onion thinly sliced
  • 1/4 cup fresh basil chopped

Dressing

  • 1/4 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Preparation

  • Boil a large pot of salted water. Add the pasta and cook until al dente, about 9-10 minutes. Drain and rinse under cold water.
  • While the pasta cooks, prep the vegetables. Halve the cherry tomatoes, dice the cucumber and bell pepper, and thinly slice the red onion.
  • In a small bowl, whisk together olive oil, red wine vinegar, and Dijon mustard. Season with salt and pepper.

Combining Ingredients

  • In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, and red onion.
  • Pour the dressing over the pasta and vegetables. Toss until everything is evenly coated. Add chopped basil and toss gently.
