Ingredients
  

Oatmeal Crumble

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups old-fashioned oats

Strawberry Filling

  • 3 cups fresh strawberries chopped

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9-inch square baking dish.
  • In a saucepan, combine chopped strawberries, granulated sugar, lemon juice, and cornstarch. Cook over medium heat, stirring frequently, until the mixture thickens and the strawberries release their juices. Set aside to cool.
  • In a large mixing bowl, combine the flour, oats, brown sugar, and salt. Pour in the melted butter and mix until the mixture resembles coarse crumbs.
  • Press half of the oatmeal crumble mixture into the prepared baking dish, spreading it evenly to form the base.
  • Pour the cooled strawberry filling over the base, spreading it evenly.
  • Sprinkle the remaining oatmeal crumble mixture over the strawberry filling, covering it completely.
  • Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the filling is bubbling.
  • Allow the bars to cool completely in the baking dish before cutting into squares.
  • Serve the bars at room temperature or slightly warmed, optionally with a scoop of ice cream or whipped cream.
  • Store leftover bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
