Equipment

  • 1 9-inch pie pan
  • 1 Electric Mixer
  • 1 Mixing Bowl large

Ingredients

Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted

Cheesecake Filling

  • 16 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream

Topping

  • 2 cups fresh strawberries sliced
  • 1 package 3 oz strawberry jello
  • 1 cup boiling water

Instructions

Crust Preparation

  • In a mixing bowl, combine graham cracker crumbs and sugar. Stir in melted butter until mixture is well combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Chill in the refrigerator while you prepare the filling.

Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add sugar and vanilla extract, beating until well combined. Slowly fold in the heavy cream, mixing until the filling is smooth and creamy.
  • Spread the cheesecake filling evenly over the prepared crust, smoothing the top with a spatula. Return to the refrigerator to chill while you prepare the topping.

Topping

  • Arrange sliced strawberries over the cheesecake filling, covering the entire surface.
  • In a separate bowl, dissolve the strawberry jello in boiling water. Allow to cool slightly before gently pouring over the strawberries, ensuring an even spread.
  • Refrigerate the pie for at least 4 hours, or until the jello is set and the pie is thoroughly chilled.

Serving

  • Once set, slice the pie into 8 servings and enjoy. For an extra touch, garnish with a dollop of whipped cream or a mint leaf.

Storage

  • Cover and store any leftover pie in the refrigerator for up to 3 days. For best results, enjoy within 48 hours to maintain freshness.
