Ingredients
  

Marinade

  • 1/4 cup olive oil
  • 2 tbsp lime juice
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 clove garlic minced

Fajita Bowl

  • 1 lb flank steak
  • 2 bell peppers sliced
  • 1 onion sliced
  • 2 cups cooked rice
  • 1 avocado sliced
  • 1/4 cup cilantro chopped

Instructions
 

Preparation

  • Combine olive oil, lime juice, chili powder, cumin, and garlic in a mixing bowl. Add the flank steak and coat it thoroughly. Refrigerate for at least 30 minutes.
  • Heat a grill pan over medium-high heat until hot.
  • Remove the steak from the marinade and grill for 4-5 minutes per side, or until cooked to your liking. Let it rest for 5 minutes before slicing.

Cook the Vegetables

  • In a large skillet, heat a bit of oil. Add the bell peppers and onions. Cook until they are tender and slightly charred, about 8-10 minutes.
  • Warm the cooked rice if necessary and divide it among four bowls.

Assemble the Bowl

  • Top each bowl of rice with sliced steak, sautéed vegetables, and avocado slices. Garnish with cilantro.
  • Serve the fajita bowls immediately for the best flavor.
