Equipment

  • 1 Large Skillet
  • 1 Baking Dish greased
  • 1 Mixing Bowl large

Ingredients

Main Ingredients

  • 1 lb steak cut into bite-sized pieces
  • 2 cups mushrooms sliced
  • 1 cup farro rinsed and drained
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 cup parmesan cheese grated
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Optional Add-ins

  • 1/2 cup sun-dried tomatoes chopped
  • 1/2 cup spinach chopped
  • 1/4 tsp red pepper flakes

Instructions

Preparation

  • Heat olive oil in a large skillet over medium-high heat. Add the steak pieces and cook until browned on all sides. Remove from skillet and set aside.
  • In the same skillet, add the onion and garlic, cooking until the onion is translucent. Add the mushrooms and cook until they are tender and golden brown.
  • In a large mixing bowl, combine the cooked farro, beef broth, heavy cream, parmesan cheese, and the mushroom mixture. Stir well to combine, then fold in the cooked steak. Season with salt and pepper.
  • Transfer the mixture to a greased baking dish, spreading it evenly. Cover with aluminum foil.
  • Preheat your oven to 375°F. Bake the casserole for 30 minutes covered, then remove the foil and continue baking for an additional 20 minutes until the top is golden and bubbly.

Serving

  • Let the casserole cool for a few minutes before serving. Garnish with fresh parsley and enjoy.

Storage

  • Allow leftovers to cool completely, then store in an airtight container in the refrigerator for up to 3 days.

Notes

Pro Tips: Opt for a tender cut of steak like sirloin or ribeye for the best texture. Sauté mushrooms until deeply golden to intensify their flavor. Pre-cook farro in beef broth for added flavor.
Ingredient Substitutions: Use light cream instead of heavy cream for a lower calorie option. Add mozzarella for extra gooeyness.
How to Serve: Serve with a fresh side salad or roasted vegetables. Pair with a robust red wine or sparkling water with lemon.
Storage & Freshness: Store leftovers in an airtight container in the refrigerator for up to 3 days.
Make-Ahead Tips: Assemble the casserole up to a day in advance and refrigerate until ready to bake. Allow extra baking time if baking from cold.
