  • 2 large English cucumbers
  • Salt to taste

  • 2 teaspoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 cloves garlic minced
  • 1 teaspoon sugar

Preparation

  • Wash the cucumbers and using a rolling pin or large knife, gently smash them until they break apart. Cut into bite-sized pieces.
  • Place the cucumber pieces in a bowl, sprinkle with salt, and let them sit for 10 minutes to draw out excess water.

Dressing

  • In a mixing bowl, whisk together sesame oil, chili oil, soy sauce, rice vinegar, minced garlic, and sugar until well combined.
  • Taste the dressing and adjust seasoning with more chili oil or sugar as needed.

Combine and Serve

  • Drain excess water from cucumbers, pour dressing over them, and toss to coat evenly.
  • Add toasted sesame seeds and chopped cilantro, and give it another toss to combine.
  • Transfer to a serving dish and enjoy immediately for the best texture.
