Ingredients

  • 1/4 cup almond butter

Preparation

  • In a large mixing bowl, combine the old-fashioned oats, pumpkin spice, and salt. Stir well to ensure even distribution of the spices.
  • In another bowl, whisk together the pumpkin puree, maple syrup, almond butter, and vanilla extract until smooth and well combined.
  • Pour the wet ingredients into the dry ingredients and stir until fully incorporated. If using any optional add-ins, fold them into the batter at this stage.
  • Transfer the batter into the prepared baking dish, spreading it evenly with a spatula to ensure an even thickness across the surface.
  • Place the baking dish in the preheated oven and bake for 25 to 30 minutes, or until the edges are golden and the center is set.
  • Remove from the oven and let the bars cool completely in the pan on a wire rack. Once cooled, lift the parchment paper to remove the bars from the pan and slice into bars.
