Ingredients
  

Muffin Batter

  • 2 ripe bananas mashed
  • 2 eggs
  • 1 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/3 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions
 

  • 1. Preheat oven to 350°F and line a muffin tin.
  • 2. Mash bananas and mix with eggs, almond butter, sweetener, and vanilla.
  • 3. Combine dry ingredients in a separate bowl.
  • 4. Mix dry ingredients into wet ingredients gently.
  • 5. Divide batter and bake until set.

Notes

Allow muffins to cool before storing. Freeze for longer storage if needed.
