  • 1 lb flank or skirt steak
  • 2 cups cooked rice

Chipotle Marinade

  • 2 tbsp chipotle peppers in adobo sauce
  • 3 cloves garlic minced
  • 2 tbsp lime juice
  • 1 tsp cumin
  • 1 tsp paprika

Toppings

  • 1 avocado diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup corn kernels
  • 1/4 cup chopped cilantro

Instructions
 

Preparation

  • In a mixing bowl, combine chipotle peppers, garlic, lime juice, cumin, and paprika. Mix well to create a marinade.
  • Place the steak in the marinade, ensuring it's fully coated. Cover and refrigerate for at least 2 hours or overnight for best results.
  • Set your grill to medium-high heat, allowing it to reach the desired temperature for grilling.
  • Remove steak from marinade and place on the grill. Cook for 4-5 minutes on each side, or until it reaches your preferred doneness.
  • Allow the grilled steak to rest for a few minutes before slicing it thinly against the grain.

  • Place sliced steak over the rice, distributing evenly among the bowls.
  • Top each bowl with avocado, cherry tomatoes, corn, and cilantro. Add a squeeze of lime juice if desired.
