  • 2 large English cucumbers
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup fresh dill chopped
  • 1/4 cup red onion thinly sliced
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • Salt to taste
  • Black pepper to taste

Instructions
 

Preparation

  • Wash the cucumbers thoroughly. Using a flat side of a knife, gently smash each cucumber until it breaks. Cut into bite-sized pieces and place in a large mixing bowl.
  • Add the chopped mint leaves, dill, and red onion to the mixing bowl with the cucumbers. Toss gently to combine the ingredients.
  • Drizzle lime juice and olive oil over the salad. Season with salt and black pepper. Toss again to ensure even coating.
  • Cover the mixing bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld.

Serving

  • Once chilled, give the salad a final toss and serve it cold. Garnish with additional mint leaves if desired.
