  • 1 lb large shrimp peeled and deveined
  • 2 cups corn kernels
  • 1 cup cherry tomatoes halved
  • 1 red bell pepper diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup cotija cheese crumbled
  • 2 tbsp olive oil

Sauce Ingredients

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp lime juice
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 2 cloves garlic minced
  • Salt and pepper to taste

Instructions
 

Preparation

  • Season the shrimp with salt, pepper, chili powder, and smoked paprika. Heat olive oil in a skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side until pink and opaque. Remove and set aside.
  • In the same skillet, add more olive oil if needed. Sauté red onion, bell pepper, and garlic until tender. Add corn and cherry tomatoes, cooking until the corn is slightly charred.
  • Lower the heat and return the shrimp to the skillet. Mix mayonnaise, sour cream, and lime juice, then pour over the shrimp and veggies. Stir to combine and let simmer for a few minutes.
  • Sprinkle cotija cheese over the top and garnish with fresh cilantro. Adjust seasoning if necessary.

Serving

  • Serve hot, garnished with extra cilantro, alongside your choice of tortillas or a fresh salad.

  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave before serving.
