Ingredients
  

Chicken

  • 4 bone-in skin-on chicken thighs
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder

Vegetables

  • 1 bunch asparagus trimmed
  • 1 cup cherry tomatoes
  • 1 red bell pepper sliced
  • 2 carrots sliced
  • 1 tbsp fresh thyme leaves

Preparation

  • Preheat your oven to 425°F. Line a sheet pan with parchment paper to prevent sticking and make cleanup easier.
  • In a medium mixing bowl, coat the chicken thighs with olive oil, salt, pepper, and garlic powder. Rub the seasoning into the skin to ensure even coverage.
  • Wash and prepare the vegetables. Trim the asparagus, halve the cherry tomatoes, slice the bell pepper, and slice the carrots. Mix them in a bowl with a drizzle of olive oil and thyme leaves.

Cooking

  • Place the chicken thighs on the sheet pan, skin-side up, and arrange the vegetables around them. Make sure not to overcrowd the pan to allow for even cooking.
  • Bake in the preheated oven for about 35-40 minutes, or until the chicken reaches an internal temperature of 165°F and the vegetables are tender.
  • If desired, broil the chicken for an additional 2-3 minutes for extra crispy skin. Watch closely to prevent burning.
