Ingredients
  

Cucumber Boats

  • 2 English cucumbers

Savory Filling

  • 1 cup cottage cheese
  • 1 tbsp chives finely chopped
  • 1 tbsp fresh dill finely chopped
  • 1 tsp olive oil
  • salt to taste
  • black pepper to taste

Instructions
 

  • Slice cucumbers lengthwise and remove seeds to form boats.
  • Mix cottage cheese, herbs, olive oil, salt, and pepper in a bowl.
  • Spoon filling into cucumber boats.
  • Serve immediately or refrigerate briefly before serving.

Notes

For best texture, assemble shortly before serving. Store filling and cucumbers separately if prepping ahead.
