  • 8 oz breakfast sausage (ground) Approximately 225 g
  • 4 large eggs
  • ½ cup shredded cheddar cheese
  • Salt & pepper, to taste
  • 4 large flour tortillas
  • 1 Tbsp olive oil for cooking
  • Optional: chopped green onions or fresh herbs for garnish

Cooking

  • Start by heating olive oil in a large skillet over medium heat. Once the oil shimmers, add the ground sausage. Cook it until browned and fully cooked, about 5–7 minutes, breaking it apart with a spatula as it cooks.
  • While the sausage cooks, crack the eggs into a mixing bowl. Add a pinch of salt and pepper, then whisk them together until well combined.
  • Once the sausage is browned, pour the beaten eggs into the skillet with the sausage. Stir gently with a spatula, cooking until the eggs are softly scrambled and just set, about 3–4 minutes.
  • Remove the skillet from the heat and sprinkle shredded cheddar cheese over the sausage and eggs. Allow it to sit for a minute, letting the cheese melt.
  • To assemble, lay a tortilla flat. Spoon a generous portion of the sausage and egg mixture onto the center. Fold the sides of the tortilla inwards, then roll it up tightly from the bottom to the top.
  • For a final touch, place the roll-ups seam side down back in the skillet over medium heat. Cook for 1–2 minutes, until the tortillas are golden and slightly crispy.
  • Serve warm, optionally garnished with chopped green onions or fresh herbs.

Notes

For added flavor, try using spicy sausage or a mix of different cheeses. Don’t overcook the eggs; they should be soft and creamy. Feel free to customize with veggies like bell peppers or spinach. Make a larger batch and freeze individual roll-ups for quick breakfasts later.
