  • 1 lb breakfast sausage, crumbled
  • 8 large eggs
  • 2 cups milk
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 cups frozen hash browns, thawed
  • 1 cup shredded cheddar cheese
  • 1 medium bell pepper, diced
  • 1 cup spinach, chopped (optional) Add for extra nutrition
  • green onions, sliced, for garnish Optional

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the crumbled sausage until browned and cooked through, about 5–7 minutes. Remove from heat and drain excess grease.
  • In a mixing bowl, whisk together the eggs, milk, salt, black pepper, onion powder, and garlic powder until well combined.
  • In the baking dish, layer the thawed hash browns evenly across the bottom. Top with the cooked sausage, diced bell pepper, and spinach if using.
  • Pour the egg mixture evenly over the top.
  • Sprinkle shredded cheddar cheese over the casserole.

Baking

  • Bake in the preheated oven for 30–35 minutes, or until the eggs are set and the top is lightly golden.
  • Allow the casserole to cool for a few minutes before serving. Garnish with sliced green onions if desired.

Notes

For added flavor, consider using spicy sausage or a dash of hot sauce. This dish can be assembled the night before. Add mushrooms, zucchini, or other vegetables to enhance flavor and nutrition.
