Ingredients

  • 2 salmon fillets skinless
  • 4 oz rice noodles
  • 1 cup jasmine rice
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil

  • 2 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 cup mixed vegetables bell peppers, carrots, etc.

Instructions
 

Preparation

  • Combine soy sauce, garlic, and ginger in a bowl. Add salmon fillets, ensuring they are well coated. Let them marinate for at least 15 minutes.
  • Heat sesame oil in a skillet over medium heat. Add the marinated salmon fillets and cook for 4-5 minutes on each side until cooked through.

Noodles and Rice

  • Cook jasmine rice in a rice cooker or pot according to package instructions until fluffy.
  • Boil rice noodles according to package instructions. Once cooked, drain and set aside.

Assembly

  • In a large bowl, layer the cooked rice and noodles. Top with salmon and add mixed vegetables.
  • Drizzle with additional soy sauce and sesame oil to taste. Garnish with sesame seeds or avocado if desired.
