  • 2 cups cooked pasta rotini or fusilli
  • 2 cups shredded rotisserie chicken
  • 1 head Romaine lettuce chopped
  • 1 cup cherry tomatoes halved

  • 1 cup creamy Caesar dressing
  • 1 tbsp fresh lemon juice

Preparation

  • Remove meat from the rotisserie chicken and shred into bite-sized pieces. Discard the skin or save it for another use.
  • Boil pasta according to package instructions. Once cooked, drain and rinse under cold water to cool.
  • Chop the Romaine lettuce into bite-sized pieces and place in a large mixing bowl.
  • Add the shredded chicken, cooled pasta, cherry tomatoes, and croutons to the mixing bowl with the lettuce.
  • Pour the creamy Caesar dressing over the salad ingredients. Add lemon juice and black pepper, then toss gently with tongs until evenly coated.
  • Sprinkle grated Parmesan cheese over the salad and give it a final toss to mix.
  • For best flavor, chill the salad in the refrigerator for at least 30 minutes before serving.
