  • 2 ribs celery, diced

  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese (optional)

Preparation

  • Begin by preheating your oven to 350°F (175°C).
  • In a skillet over medium heat, melt the butter. Add the diced onion and celery, sautéing for about 5 minutes until they are tender and fragrant.
  • In a large mixing bowl, combine the stuffing mix, chicken broth, garlic powder, and thyme. Stir in the sautéed onions and celery, mixing well.
  • Gently fold in the shredded rotisserie chicken, ensuring it is evenly distributed throughout the mixture.
  • Transfer the mixture to a greased 9x13-inch baking dish, spreading it out evenly. If using, sprinkle the shredded cheddar cheese over the top.
  • Cover the dish loosely with aluminum foil and place it in the oven. Bake for 25 minutes, then remove the foil and bake for an additional 15-20 minutes, until the top is golden brown and the mixture is heated through.

Notes

For extra flavor, consider adding a splash of Worcestershire sauce to the stuffing mix. You can substitute the chicken with leftover turkey for a festive twist. Serve with a side of steamed vegetables to add freshness and color to your meal. This dish freezes well; simply wrap it tightly before baking and store for up to three months.
