Ingredients
  

Sweet Potato Rounds

  • 2 sweet potatoes sliced into rounds
  • 1 tbsp olive oil
  • salt to taste

Yogurt Dip

  • 1/2 cup plain Greek yogurt
  • 1 tsp lemon juice
  • 1/4 tsp garlic powder

Instructions
 

  • 1. Preheat oven to 425°F and line a baking sheet.
  • 2. Slice sweet potatoes into even rounds and toss with olive oil.
  • 3. Arrange on baking sheet and sprinkle with salt.
  • 4. Roast, flipping halfway, until tender and lightly browned.
  • 5. Mix yogurt dip ingredients and serve alongside sweet potatoes.

Notes

Serve warm or at room temperature. Store components separately for best texture.
