Salad

  • 1 head cauliflower cut into florets
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 bunch kale stems removed and leaves chopped
  • 2 apples thinly sliced

Dressing

  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat the oven to 425°F. Toss cauliflower florets with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25 minutes until golden brown.
  • While the cauliflower roasts, chop the kale leaves and place them in a large mixing bowl.
  • Thinly slice the apples and add them to the bowl with the kale.
  • In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
  • Once the cauliflower is roasted, let it cool slightly. Add it to the bowl with kale and apples.
