  • 1 cup quinoa rinsed and drained
  • 2 cups vegetable broth or water
  • 4 large carrots peeled and sliced into sticks
  • 1 can 15 oz chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/4 cup fresh parsley chopped
  • 1/4 cup crumbled feta cheese optional
  • Juice of 1 lemon

Preparation

  • Preheat the oven to 400°F. Rinse and drain the quinoa. Peel and slice the carrots into sticks, and drain and rinse the chickpeas.
  • In a medium saucepan, bring the vegetable broth or water to a boil. Add the rinsed quinoa, cover, reduce heat to low, and simmer for 15 minutes. Remove from heat, let sit for 5 minutes, then fluff with a fork.
  • Place the carrot sticks and chickpeas on a baking sheet. Drizzle with olive oil, and sprinkle with salt, pepper, cumin, and paprika. Toss to coat evenly. Roast for 25-30 minutes, stirring halfway through, until tender and caramelized.
  • In a large bowl, combine the cooked quinoa, roasted carrots, and chickpeas. Add the chopped parsley and crumbled feta if using. Drizzle with lemon juice and a bit more olive oil. Toss to combine.

Serving

  • Taste and adjust seasoning if needed. Serve immediately or refrigerate for later. This salad can be served warm or cold.
