  • Preheat your oven to 400°F. Peel the butternut squash, remove seeds, and cut into 1-inch cubes. Toss with olive oil, cumin, smoked paprika, salt, and pepper. Spread on a lined baking sheet.

  • Rinse 1 cup of quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Fluff with a fork.

  • Divide the cooked quinoa among bowls. Top with roasted butternut squash and black beans. Garnish with avocado slices, cilantro, and a squeeze of lime juice.
