Preparation

  • Peel and cube the butternut squash. Trim the broccoli into florets. Toss both with olive oil, salt, and pepper.
  • Preheat oven to 400°F. Arrange squash and broccoli on a baking sheet. Roast for 25-30 minutes, flipping halfway, until tender and slightly charred.
  • In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
  • In a large bowl, combine roasted vegetables with mixed greens. Drizzle with vinaigrette and toss to combine.
